I love  cream puffs ,…amazing french dessert that it seems so simple to make but it’s not…i don’t know if the next scenario happened to you (if you are an expert maybe not 🙂 )but to me before i tried this recipe, many times…it all goes well ,you make the dough, pipe your puffs ,put them into the oven, they are beautifully risen up in the oven, but when you take them out they deflate and go flat….so after making them many times i found out some reasons for that :

1.they are under baked , 2.you opened the oven early, 3.you used a ventilated oven.,4.the recipe ingredients are not well combined….this 3 things happened to me, so for me this is the ultimate recipe ….and here are my advices for you to get them right too…:-)

  • Yield:30-35 cream puffs
  • Prep time:20 min + baking & cooling time

ingredients:

  • Choux pastry:
  • 100 gr butter
  • 50 ml milk 
  • 200 ml water
  • 150 gr flour
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 4 eggs
  • Filling:
  • 50 gr red fruits jam & 250 gr whipped cream

Baking time:

Preheated oven to 200 °C – 20 min

Directions:

  1. Preheat your oven to 200°C(static oven if possible)
  2. Line a baking pan with baking paper.
  3. In a medium saucepan bring to a boil 100 grams butter with 50 ml milk and 200 ml water.
  4. When the mixture is boiling( remove the saucepan from the heat or reduce the temperature) add ,all in once, 150 grams flour and mix quickly until you achieve a ball.
  5. Cook the dough for 1-2 minutes until it dries out a little bit.
  6. Transfer the dough to another bowl and add 1 teaspoon of salt and one teaspoon of sugar.
  7. Mix well until the dough is cooled down a little bit.
  8. Add ONE AT A TIME 4 eggs….add the first one and mix until it is fully incorporated ,then the second etc..
  9.  Continue mixing until the dough is smooth.(lift your spatula in the air ,if the dough forms a V shape at the end of the spatula then you have the right consistency)
  10. Transfer the dough to a pipping bag with a 1 cm diameter round tip.
  11. Pipe 30-35 puffs onto the baking pan that you prepared before.
  12. Dip a fork in water and round them up a little bit.
  13. Bake them at 200°C for about 20-25 min, do not open the oven while it bakes 🙂
  14. Remove from the oven and let them cool down completely.
  15. Cut them in half and fill with your favorite filling…mine was red fruits jam and whipped cream. 🙂 but i love them also with pastry cream or chocolate cream.
  16. Enjoy your cream puffs!
