Delicious Strawberry shortcake

STRAWBERRY SHORTCAKE

Easy strawberry shortcake …soft sponge cake butter free filled with a yummy pastry cream and fresh strawberries .

STRAWBERRY SHORTCAKE

ingredients:

  • Strawberry filling:
  • 500 gr strawberries
  • 2-4 tbs granulated sugar
  • 2-4 tbs water
  • half lemon juice 
  • Pastry cream:
  • 2 egg yolk
  • 4 tbs granulated sugar
  • 2 tbs flour
  • 400 ml milk
  • vanilla/lemon zest for flavoring
  • 500 ml whipped cream
  • Sponge Cake:
  • 4 eggs
  • pinch of salt
  • 140 gr granulated sugar
  • 25 ml olive oil
  • 140 gr flour (cake flour 00 ) pinch of baking powder
  • half lemon zest

Baking time:

Preheated oven to 170°C – 25 -30 min

Directions:

  1. Wash and cut into small pieces 500 gr strawberries .
  2. Add 2-4 tbs granulated sugar,2-4tbs water and half lemon squeezed to the mixture.
  3. Place them in the fridge and wait for at least half an hour to achieve a yummy syrup for your cake.
  4. Pastry cream:
  5. In a medium bowl whisk 2 egg yolks with 4 tbs granulated sugar and 2-4 tbs flour.
  6. Add gradually 400 ml warm milk to the mixture.(You can add also some lemon zest or vanilla flavor or both)
  7. Pour the mixture into a saucepan and place the saucepan onto medium heat.
  8. Bring to a boil while stirring until you get a pouring dense cream consistency.
  9. Let the cream cool down completely.
  10. Whip with a hand mixer/stand mixer 500 ml cream( i added 2-4 tbs sugar because mine it was sugar free..)until the desired peak stiffness is reached.
  11. Mix the cooled down pastry cream with the whipped cream and place the bowl in the fridge.
  12. Sponge Cake:
  13. Preheat your oven to 170°C.
  14. Beat with a hand mixer /stand mixer 4 eggs with a pinch of salt, add gradually 140 gr granulated sugar ,25 ml olive oil ,140 gr flour and a pinch of baking powder.
  15. For flavor i added half lemon zest ( you can add some vanilla flavor also).
  16. Bake in a preheated oven to 170°C for about 25-30 min.
  17. Let the sponge cake cool down completely.
  18. After cooling ,cut it into 3 layers.
  19. Add your strawberry filling and then the cream with a decorating bag or just a spatula between each layer.
  20. Decorate your cake with strawberries ,mint ecc
  21. Enjoy!
